I loved when my mom made this for those chilly nights! Sometimes she would top each bowl off w/ some crumbled bacon, YUM!!

Ingredients For mom's easy potato-corn chowder

1 conion, chopped

2 tspminced garlic

1 Tbspbutter

2 cdiced potatoes

1 cred bell pepper, chopped

2 creduced-sodium chicken broth
-
1/4 tsppepper
-
1/4 tspmarjoram
-
1bay leaf
-
dashnutmeg
-
116-1/2 oz can cream-style corn
-
17 oz can whole kernel corn
-
112 oz can evaporated milk, i used fat-free
-
paprika, for garnish
How To Make mom's easy potato-corn chowder

1In lg saucepan, cook onion, garlic and butter over medium heat for 5 mins, stirring often. Add potatoes, red bell pepper, broth, pepper, marjoram, bay leaf, and nutmeg. Bring to a boil.

2Reduce heat to low and simmer 20 mins, stirring occasionally. Stir in remaining ingredients, except paprika. Bring to a boil.

3reduce heat to low. Simmer 2-3 mins more. Remove bay leaf. Serve sprinkled w/ paprika.
