Ingredients For cream of crab soup

1lb. crab meat

1/4cup finely chopped onion

1/2tsp. finely grated lemon peel, optional

4tbsp. butter
-
1-1/2tbsp. flour
-
4cups half and half
-
1/4cup dry sherry
-
1tsp. worcestershire sauce
-
pinch of nutmeg
-
salt and white pepper to taste
How To Make cream of crab soup

1Saute onion and the lemon zest (if you elect to use lemon zest) in butter. Add flour and heat until bubbly. Add half and half slowly and stir with a whisk.

2Add crab meat and simmer for about 20-30 minutes. Add remaining ingredients and simmer for another 10-15 minutes. Serve immediately.
