I LOVE LOVE LOVE Broccoli Soup, this one has the plus of ham and cheese! Thank goodness I found this one in Ma's recipe box in NC in July 2019!

Ingredients For broccoli chowder, ma

  • 2 lb
    fresh broccoli
  • 2
    12 1/2 oz cans chicken broth
  • 3 c
    milk
  • 1 c
    chopped cooked ham
  • 2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1/4 c
    butter
  • 1 clove
    light cream
  • 1/2 lb
    swiss cheese, grated

How To Make broccoli chowder, ma

  • 1
    Cook broccoli, covered, in 1 can chicken broth in large kettle for about 7 min or until just tender. Remove broccoli from broth, leaving broth in pan. Cool and chop broccoli coarsely. Add remaining can broth, milk, ham, salt and pepper to broth in kettle. Bring to boil over med heat, stirring occasionally. Stir in cream, cheese, butter and broccoli. Heat just to serving temperature.
