This recipe (supposedly) came from Bratten's Seafood Grotto, a very popular (however, now defunct) seafood restaurant in Salt Lake City, Utah. It is very creamy, rich and full-flavored.

Ingredients For bratten's clam chowder

1 cfinely chopped onion

1 cfinely diced celery
-
2 cfinely chopped potatoes

2 can(6 1/2 oz. each) minced clams

3/4 cbutter
-
3/4 call-purpose flour
-
1 qthalf-and-half
-
1 1/2 tspsalt
-
1 pinchblack pepper
-
1 Tbspred wine vinegar
How To Make bratten's clam chowder

1Drain clams. Place vegetables in small pan and pour clams over. Add water to barely cover; simmer, covered, until tender.

2Meanwhile, melt butter; add flour and blend. Cook a few minutes, stirring constantly. Add cream and continue to cook, stirring constantly, till smooth and thick.

3Add vegetables and liquid; add seasonings and vineger and heat through.
