I was trying to come up with something to use all the zucchini in our garden and came up with this recipe. We love it really spicy.

Ingredients For zucchili lamb casserole

1 lbground lamb
-
1/2 lgonion, chopped

1-2red peppers (can use jalapeno for added heat)

1 Tbsppowdered garlic

fresh ground pepper to taste

1 cfresh basil leaves

2 ccooked rice
-
1/2 cchicken boullion
-
salt
-
1-2zucchini - peeled and chopped

1/2-1 cmozzarella cheese
-
1 lgtomato seeded and chopped
How To Make zucchili lamb casserole

1cook onion, groung lamb, chopped peppers in frying pan with a little olive oil until onions are translucent and lamb is just barely done.

2In oven proof pan mix all remaining ingredients along with lamb mixture. Top with mozzarella cover with either a lid or aluminum foil and bake in 350 degree oven for 1 hour or until cheese is melted.

3The spices can be adjusted to suit your tastes. I have even added curry to this dish with great success.
