white chili (reduced fat)

I tried an excellent recipe from another site. I borrowed it as a basis for this slightly different, lower fat but just as flavorful version! (Thanks LL for the inspiration!)

Ingredients For white chili (reduced fat)

  • 1 lb
    93% fat ground turkey
  • 1 md
    onion, chopped
  • 1 tsp
    garlic, minced
  • 1/2 c
    celery, diced
  • 2 can
    (14 ounce) cannelloni beans, rinsed and drained
  • 1 c
    frozen corn
  • 1 can
    (4 ounce) green chilis, mild, medium or hot
  • 2 c
    chicken stock
  • 1 tsp
    salt
  • 1 1/2 tsp
    cumin
  • 1 tsp
    dried oregano
  • 1/4 tsp
    new mexican green chili powder or cayenne pepper (more to taste)
  • 1/4 tsp
    black pepper
  • 1 can
    fat-free evaporated milk (12 oz)
  • 1/2 c
    fat free plain greek yogurt
  • GARNISHES
  • shredded mexican blend cheese
  • sliced black olives,
  • chopped cilantro leaves
  • crushed tortilla chips

How To Make white chili (reduced fat)

    In a large pot, break up ground turkey and stir over medium-high heat until no more pink shows. Add chopped onion, celery and garlic. Heat until onion starts to turn translucent.

    Add broth, corn and beans, then seasonings. Bring to boil, then cover and simmer for about 1/2 hour to give flavors a chance to blend.

    Slowly pour in evaporated milk and add yogurt. Keep over low heat until warmed through. Adjust seasonings.

    Serve with desired garnishes.
