I love White Chicken Chili and have experimented with other recipes. This is the best recipe I have found.

Ingredients For white chicken chili

1 Tbspolive oil, extra virgin

2chicken breasts, diced

2 smwhite onions, diced
-
2 smcarrots, sliced
-
2stalks celery, diced

4 clovefresh garlic, minced

2 cangreat northern beans, 16 oz.

4 cchicken broth
-
2 can4 oz., mild chopped green chilies
-
2 tspground cumin
-
1 1/2 tspdried oregano (or 1 tablespoon fresh chopped)

1/4 tspground cloves
-
1/4 tspcayenne pepper (add at end to taste)

3 cmonterey jack cheese, shredded
-
cilantro, fresh

sour cream
How To Make white chicken chili

1Heat olive oil in dutch oven and saute garlic until lightly browned. Add diced chicken, onion, carrots and celery and saute until chicken is done and veggies soften. Add beans, undrained, chicken broth and spices (except cayenne) and simmer for 2 hours.

2Remove from heat. Add 2 cups of the jack cheese and stir until melted, then add cayenne to taste. Serve and top bowls with remaining sprinkle of cheese, a dollop of sour cream and chopped cilantro.
