Love Chili, but sometimes I need some variety. After perusing several recipes, I decided to wing it and came up with a bean filled Taco Soup that is easy to prepare and even easier to eat.

Ingredients For weekday taco soup

2 lbbeef, turkey, or chicken - ground

1 lgonion, diced
-
1 pkgtaco seasoning mix
-
1 pkgranch dressing mix
-
2 cwater
-
1 cantomatoes, diced w/juice (28 oz.)

1 cangreen chilies, diced
-
1 canchili beans w/juice
-
1 canblack beans, drained
-
1 cankidney beans, drained (light or dark)
-
1 canpinto beans, drained or pink beans, drained
-
1 canwhite hominy, drained
-
cheddar cheese, shredded - optional
-
sour cream - optional
-
guacamole - optional
How To Make weekday taco soup

1Place meat and onions in large pot and brown burger. Drain grease. Stir in taco seasoning, ranch seasoning and water. Simmer for approx. 15 minutes.

2Add chilies, chili beans w/juice, all the drained beans and hominy and stir thoroughly. Simmer approx. 20 minutes stirring occasionally.

3Serve with toppings such as shredded cheddar cheese, sour cream, and/or guacamole.
