Ingredients For touchdown italian chili for a crowd

  • 1 pkg
    (appr. 19 oz) italian sausage links (mild or hot)
  • 1 Tbsp
    olive oil
  • 1 c
    chopped onion
  • 3 stalk
    celery, sliced into 1/2-inch pieces
  • 1 lg
    red bell pepper, seeded and cut into 1-inch pieces
  • 1 lg
    yellow bell pepper, seeded and cut into 1-inch pieces
  • 1 lg
    green bell pepper, seeded and cut into 1-inch pieces
  • 1 Tbsp
    minced garlic
  • 3 can
    (14.5 oz each) italian stewed tomatoes
  • 1 can
    (15 oz) red kidney beans, rinsed and drained
  • 1 can
    (15 oz) garbanzo beans, rinsed and drained
  • 1 can
    (6 oz) tomato paste
  • 3/4 c
    sliced black olives
  • 1/4 c
    cream sherry (optional)
  • 1 Tbsp
    chopped fresh basil
  • 1 1/2 tsp
    unsweetened cocoa powder
  • black pepper, to taste

How To Make touchdown italian chili for a crowd

  • 1
    Grill or pan-fry sausages according to package instructions. Slice them lengthwise and then into 1/2-inch half moons.

    In a large Dutch ove or soup pot, heat oil over medium-high heat and saute onion, celery, peppers and garlic until tender, turning down heat if needed, to keep garlic from burning.

    Add sausage and remaining ingredients and bring to a boil. Reduce heat; cover and simmer for 20-30 minutes.
