This recipe can literally be prepared in 10 minutes if you have pre-cooked ground beef on hand. Just a few minutes extra if you don't. It comes out a lot like a chili & has a wonderful flavor. It's great for lunch since it is so quick & easy. It's one of our favorites. We love it with chips & cheese & maybe sour cream!

Ingredients For southwestern black bean stew

1 lbground beef, cooked, drained
-
1/8 - 1/4 ctaco seasoning mix
-
2 cfrozen corn
-
3 cblack beans
-
1/2 candiced green chili peppers
-
1 cantomato paste
-
1 1/2 cwater
-
1 candiced tomatoes
-
1/2 csour cream
- SERVE WITH:
-
tortilla chips
-
shredded cheese
-
sour cream
How To Make southwestern black bean stew

1In a medium to large pot, place cooked, drained ground beef, corn, beans, tomatoes, chili peppers, tomato paste, taco seasoning & water. Mix well. Add the sour cream.

2Simmer on medium for 20 - 30 minutes.
