This is a combination of recipes that I put together tonight. The better half said it was great! Less beans, more meat!

Ingredients For old folks chili

  • 2 1/2 lb
    ground beef (i used ground round)
  • 1 lb
    medium pork sausage (i used old folks)
  • 1/2
    green pepper
  • 1/2
    red pepper
  • 1/2
    yellow onion
  • 22 oz
    tomato sauce (i used red gold)
  • 15 oz
    kidney beans, drained & rinsed (i used red gold)
  • 15 oz
    diced tomatoes (i used red gold)
  • 4 oz
    tomato paste (i used hunts
  • 1 c
    water
  • ground cumin, to taste
  • mexene chili powder, to taste
  • salt & pepper, to taste

How To Make old folks chili

  • 1
    Place the ground beef, sausage, peppers and onions in a large cast iron pot over medium-high heat. Cook, stirring to crumble, until evenly browned and vegetables are soft. Drain off grease. Add back to pot, add kidney beans, diced tomatoes, sauce & paste and the cup of water. Stir for a few minutes to combine. Stir in cumin, chili powder & salt & pepper to taste. Simmer over low heat for 40 minutes uncovered.
