Ingredients For marcia's chili

  • 2 can
    dark kidney beans
  • 2 can
    light kidney beans
  • 1 can
    cannelini beans
  • 2` lb
    lean ground beef
  • 2 can
    stewed or diced tomatoes
  • 1 can
    rotel tomatoes and chili -mild, regular or hot
  • salt and pepper
  • 1/4 c
    chili powder
  • 1/4 tsp
    white pepper
  • 1
    cayenne pepper if you want spicy
  • tomatoe juice or v8
  • 1 lg
    onion - diced

How To Make marcia's chili

    Brown ground beef in skillet, drain all grease and put in stock pot. Open all cans - I don't drain any of them. Empty all canned items into pot and add onion, if you want heat - throw in some peppers of your choice.

    Stir all well. Add all spices. Add tomatoe juice. Less if you want thick chili, more if you want it thinner.

    I added a good pinch (between thumb and index finger) of baking soda to this. I was told that this help to take the acid bite out of the tomatoes. I cook this for about 45 minutes. Taste it and if you want it hotter - add more white pepper, black pepper etc.
