I kept tweaking my chili recipe until I finally settled on this one. It has received my family's seal of approval.

Chili con carne is a fancy name for chili with meat. Janie's chili has a nice balance of warm spices. Thick and hearty, we served our chili con carne topped with cheese and with a piece of cornbread. It's a wonderful meal for game day or when serving a crowd.

Ingredients For janie's chili con carne

1 1/2 lbground beef, sirloin or round

1 1/2 conion, chopped

1 cgreen bell pepper, chopped

2 clovegarlic, minced

1 cancrushed tomatoes, plain or Italian style (28 oz)

2 Tbspchili powder
-
2 1/2 tspsalt
-
2 tspcumin powder
-
1/2 tsporegano, dried
-
1/4 tspbasil, dried
-
1/8 tspcayenne pepper (or to taste)

3/4 tspcelery seed
-
2 cankidney beans, drained (16 oz each) OR
-
2 canchili beans, in chili sauce, undrained (16 oz)
How To Make janie's chili con carne

We filled the empty tomato can with water and added it for more liquid.

1In a Dutch oven, cook beef, onion, green pepper, and garlic until the meat is lightly browned. Drain any accumulated fat.

2Add tomatoes and all the spices.

3Stir well and bring to a boil.

4Reduce heat. Cover and simmer 1 1/2 - 3 hours.

5Add the kidney or chili beans in the last 45 minutes of cooking.

6NOTE: You can thicken this, if desired, with a paste of flour or corn starch mixed with water. Then slowly add while stirring.
