This is a change from my tomato based chili but non the less, very tasty and good! With the days getting cooler, chili just seemed fitting for today! While this is not on my low carb diet, I think it's probably pretty healthy! Enjoy!

Ingredients For dee dee's chicken chili with white beans

  • 3 lg
    boneless chicken breast (about 2 lbs)
  • 32 oz
    chicken broth
  • 1 c
    chopped onions
  • 4 clove
    garlic, minced
  • 1 tsp
    oregano, dried
  • 1 tsp
    white pepper
  • 1 tsp
    red pepper flakes
  • 1 1/2 tsp
    cummin
  • 1/2 tsp
    everglades seasoning
  • salt to taste
  • 2 pt
    canned great nothern beans, drained (or two 15-oz cans)
  • 1
    (15-oz) can whole kernel corn, drained
  • 2 Tbsp
    lime juice
  • colby jack cheese for garnish
  • snipped green onions for garnish

How To Make dee dee's chicken chili with white beans

    Combine first 11 ingredients in a heavy 6-quart pot. Bring to a boil, and cook over medium heat until chicken is tender and done. Remove chicken from pot; set aside to cool.

    Add beans, corn and lime juice to pot.

    Once chicken is cool enough to handle (I cut it hot), cut into bite size pieces and return to pot. Simmer over a medium low heat for 30 minutes.

    Spoon into bowls and garnish with cheese, onions, peppers, sour cream...etc Serve with a hot buttered slice of cornbread.
