Adapted from a recipe in "The Mini Page" kids' insert found in many newspapers. This dish is tasty and satisfying and practically dances with color.

Ingredients For colorful meatless chili

1 Tbspolive oil

1small red bell pepper, chopped

1medium zucchini, cubed

1 cchopped mushrooms
-
3 clovegarlic, minced or crushed

3/4 Tbspchili powder
-
1 tspcumin
-
1/8 tspsalt
-
scant 1/4 tspcinnamon
-
2 candiced tomatoes (do not drain)

1 canred beans, drained
-
1medium tomato, diced, or a few chery tomatoes, cut in half (to add color, use yellow or orange tomatoes)
How To Make colorful meatless chili

1Heat oil in large soup pot or wide, deep skillet over medium heat.

2Add all vegetables and garlic, stirring until vegetables soften.

3Add seasonings and cook an additional 5 minutes.

4Stir in tomatoes and beans.

5Heat on medium for 10 minutes, then lower heat and simmer for 25 minutes. During last 7-8 minutes, add chopped fresh tomatoes.
