1 mdyellow onion, diced

1 Tbspcoconut or palm sugar

1 Tbspdehydrated onions, ground to a powder

1 tspsalt, kosher variety, fine grind

1/2 tspblack pepper, freshly ground

1 1/2 cbeef stock, not broth

16 ozchili beans, freshly made or canned

15 ozpetite diced tomatoes, 1 can

2To make this recipe, you will need a medium-sized soup pot (cast iron sounds good).

3There are essentially three ways that you could make this recipe: 1. You could follow all the steps, not add the beef, and have meatless chili. Trust me, this chili is good with or without meat. 2. You could follow all the steps, add your own, uncooked beef, and simmer for about 2 hours, until the beef cubes get tender. 3. You could add the precooked beef (from my recipe), let it warm through and go for it in about 30 quick minutes

4Here is the recipe I am using for the precooked beef. You can make it days, weeks, even months ahead of time, throw it in the freezer, and pull out when needed. I have over a dozen of these in my walk-in; along with packets of precooked chicken and pork, and other stuff. Using this method, you are not sacrificing one scintilla of flavor. 5Gather your ingredients (mise en place).

6Chop up and prep your veggies.

7Add the oil to a soup pot over medium heat.

8When the oil begins to simmer add the chopped onions.

9Stir until the onions soften, about 3 – 4 minutes, and then add the garlic.

10Stir until fragrant, about 60 seconds.

11Add the dry spices.

12Stir and mix with the onions and garlic, about 90 seconds.

13Add the tomato paste, and stir to combine, about 60 seconds.

14Add the beef stock and stir to combine, about 60 seconds.

15Simmer for about 5 minutes.

16Add the remainder of the liquid ingredients, and stir to combine, about 2 minutes.

17Simmer for about 5 minutes.

18Add the prepared beef, and warm through, about 5 minutes.
