My husband, the inspiration and occasional author, of the recipes I share is a very picky eater. He does not mind the tomato juice in this recipe, but does not like actual tomatoes. This is our basic recipe. It absolutely can (and should) be modified to add onions and tomatoes if you like those vegetables in your chili. I do; he does not. This is one of those "wars" that was easier to give in on than not. Chili is not something we reserve only for fall and winter, although we make it more often then. I hope you'll enjoy this as much as we do!

Ingredients For chris' ultimate chili

1 lbground chuck, cooked

1 cantomato juice (64 oz or so - the big ones)

1 canchili beans (15 oz)

2 canblack beans (15 oz)

1 canred beans (15 oz)

Tbspchili powder

cayenne pepper (1/2 to 1 teaspoon)

1 tspgarlic powder

1 tsponion powder

1Brown the ground chuck, drain oil.

2Mix all ingredients in large pot and bring to the boil.

3Simmer for one hour.

4Top with crackers, cheese, sour cream, et cetera... The toppings for chili are endless. (I enjoy white onions and ranch dressing occasionally.)
