chili con carne

We love chili and I usually use ground beef or turkey. This time, I combined a few other recipes to utilize some angus beef cubes. I like to keep the Weight watcher points low - this yields about 1 cup per serving for 5 WW Smartpoints.

Ingredients For chili con carne

  • 1 c
    beef bouillon
  • 1 Tbsp
    adobo seasoning
  • 1 Tbsp
    chili powder
  • 1/2 tsp
    new mexico green chili powder
  • 3 Tbsp
    yellow cornmeal
  • 1 tsp
    cocoa powder
  • 1 tsp
    brown sugar
  • 1 tsp
    garlic granules or minced garlic
  • 1 tsp
    dried oregano, crumbled
  • 1 tsp
    ground cumin
  • 1 lb
    uncooked lean chuck roast, cubed into bite-sized pieces
  • kosher salt and black pepper, to taste

    onion, diced
  • 1/4 c
    poblano pepper, finely diced
  • cooking spray
  • 12 oz
    beer, light or your choice
  • 15 oz
    can diced tomatoes, including liquid
  • 15 oz
    can kidney beans, drained and rinsed
  • lime wedges, garnish
  • cilantro, garnish
  • sliced black olives, garnish
  • shredded mexican cheese mix, garnish

How To Make chili con carne

    Microwave 1 cup broth in a medium glass bowl or measuring cup until hot (or heat on stove and pour into bowl); add chili powders along with cornmeal, cocoa powder, sugar, garlic, oregano and cumin; stir well together and set aside.

    Toss beef with salt and pepper. Spray a dutch oven and sear meat cubes until nicely browned, at least on one side. Remove to plate.

    Add another spray and cook onions and peppers until softened.

    Add beer; bring to a boil over high heat. Stir in reserved spice mixture, and tomatoes with their liquid.

    Add beef; reduce heat to medium-low, cover and simmer until tender, about 1 1/2 to 2 hours (or cook in a 250°F oven for 1 1/2 to 2 hours).

    Add beans, stir and heat through, about 5 minutes; squeeze in lime juice, if desired, and adjust seasonings to taste.
