caldillo (northern new mexico-style soup)
(4 ratings)
My mom's favorite. On a cold day with tortillas this soup will warm your tummy.
Blue Ribbon Recipe
This caldillo is a warm and comforting soup that's easy on the budget and doesn't make a large pot. A good dinner option for a smaller family. Typically it's made with cubed stew meat, but this version substitutes ground beef. Onions and peppers add a lot of flavor to the soup, but the heat level is mild. Tomatoes and potatoes add another layer of texture and flavor.
