2-1/2 lbBite-size peices of Pork - any cut but Loin is best

1 tspSalt

1/2 tspPepper

3Onions, diced

2green peppers
-
3 cloveGarlic, small dice

2 15oz canDiced Tomatoes

12ozBeer
-
2 TbspChili Powder, or to taste

1 TbspGround Cumin

2 15oz canBlackbeans, drained and rinsed

3 cCorn Kernals, canned or frozen

2 TbspEach - Cider Vinegar & Sugar
How To Make blackbean chili

1Season pork with salt & pepper and saute with onion in heavy soup pot coated with pan spray. When onion is golden, add green peppers, garlic & tomatoes. Simmer until pork is tender, about 20-30 minutes. Then add beer, chili powder, cumin, beans & corn. Simmer at least 30 minutes. Add sweetened vinegar. Actually it is better the next day so you may want to prepare this the night before and refrigerate until serving. If you like spicey -- prepare with one Pablano Pepper instead of green peppers. WOW!
