My mothe-in-law gave me this recipe and it is fantastic! I think she found it in a Taste of Home Magazine. With fall right around the corner I'm looking forward to making it again!

Ingredients For black bean and pumpkin chili -slow cooker

  • 1 md
    chopped onion
  • 1 md
    chopped yellow pepper
  • 3 clove
    minced garlic
  • 2 Tbsp
    olive oil
  • 3 c
    chicken broth
  • 2 can
    15 oz black beans
  • 2 1/2 c
    cubed cooked turkey
  • 1 can
    15 oz solid packed pumpkin
  • 1 can
    14 1/2 oz diced tomatoes drained
  • 2 tsp
    dried parsley flakes
  • 1 1/2 tsp
    dried oregano
  • 1 1/2 tsp
    ground cumin
  • 1/2 tsp
    salt

    In a large skillet saute onion, yellow pepper and garlic in oil until tender, transfer to slow cooker, stir in remailing ingredients.
