Ingredients For australian dinkum chili

1/2 lbbacon

2 Tbspvegetable oil

2 mdonions, coarsely chopped

1 stalkcelery, coarsely chopped

1bell pepper

2 lbtop beef sirloin, cut into 1-inch cubes

1 lbhamburger

1 lbground pork

4 Tbspground red pepper

3 Tbspground chili pepper

2garlic cloves, finely chopped

1 Tbspdried oregano, preferably mexican

1 tspground cumin
-
24 ozbeer, preferably australian

14 1/2 ozcanned whole tomatoes

3 tspbrown sugar
How To Make australian dinkum chili

1Fry the bacon in a skillet over medium heat. Drain the strips on paper toweling and cut into 1/2-inch dice and reserve.

2Heat the oil in a large heavy pot over medium heat. Add the onions, celery, and green pepper and cook until the onions are translucent.

3Combine all the beef and pork with the ground chile, garlic, oregano, and cumin.

4Add this meat-and-spice mixture to the pot. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.

5Add the beer, tomatoes, and reserved bacon to the pot.

6Bring to a boil, then lower the heat and simmer, uncovered, for 1 1/2 hours.

7Taste, adjust seasonings, and add more beer if desired. Simmer for 2 1/2 hours longer.

8Add the brown sugar and simmer for 15 minutes longer.
