3 meat comfort chili
(2 ratings)
I am a carnivore, and so therefore, I had to mess around with another chili recipe idea. I wanted to experiment with some flavors that normally you wouldn't find in a chili recipe, I was really surprised at how well it worked out. I even got the stamp of approval from my fiance ;-)

How To Make 3 meat comfort chili
-
1Prepare meats, cook turkey meat and hamburger meat together in the same frying pan. After thoroughly cooked set to the side in a bowl. Chop kielbasa into small bite-sized chunks and cook in same frying pan. When thoroughly cooked add to bowl of other meats. Next, chop half a large onion and caramelize in same frying pan, infusing all the meat flavors into the onions. When finished set to the side and prepare the crock pot.

2Open all canned goods, drain and rinse beans and new potatoes in a colander. Turn your crock pot on to high and add the following ingredients.
-
3Empty carton of chicken broth (32 oz) into crock pot. Add 2 packets of Red Chili mix to broth and stir until seasonings have dissolved. Add 2 cans of diced tomatoes, 2 cans tomato sauce, 1 can of chopped green chilis, garlic, lime juice, cilantro. Stir mixture.
-
4Add meats and stir into mixture. Finally, add the beans and new potatoes and stir mixture until evenly distributed. Put the lid on and let the magic happen for the next 24 hours.

5I always like to get my chili to a nice rolling boil in the crock pot then turn it down to medium to cook during the day if I'm going to serve it the same night. If you have the time, I recommend turning your crock pot to low. The earlier you start your crock pot of chili, the better your chances are to have it the same night. You don't have to wait for 24 hours, but you know how chili is, the longer it cooks, the better.

6My fiance loves to have his chili with steamed white rice, cheese and sour cream. So as an option steam some white rice on the side. Also, as I am garnishing my dish, as you see in the picture, I squeeze a little bit of fresh lime juice over the sour cream. Then, I top with some fresh cilantro leaves. It always gives it that fresh gourmet flavor. Enjoy!
