i made this recipe when my children were small and we were living on a very small income. i needed to cook dinner one day and saw that we were out of meat. so i started looking thru the cabnits and saw i had all these different cans of vegtables. i started pulling cans out of the cubbord. i looked around to see what kind of spices i had on hand to season with. i looked at what i had and the only thing that came to mind was chili. since i knew my children liked it with meat i thought they would not notice if it were missing. they loved it and asked for it time and again. i've been making it for over 20 years now and they still like it.

Ingredients For 3 can homeade veggie chili

3 cancans of pinto beans
- THE BEST HOMEADE VEGGIE CHILI

3 canranch style beans

3 canblack beans
-
3 canpork and beans

3 cancarrots, cubed

3onions, small white diced

3 cantomatoes, canned and chopped, with liquid

3 cantomatoe sauce

3 clovegarlic diced

3tablespoons of chili powder

3tablespoons of onion powder

3teaspoons of salt(optional) because beans have salt in them

3tablespoons of sugar(optional) i use it to help cut the acid of the tomatoes.

3tablespoons of catsup(optional)
How To Make 3 can homeade veggie chili

1open all cans, you do not need to drain them,the juice is helpful in the chili. turn on stove to medium heat. put a little oil in pan and saute the onions.next pour all cans into pot on top of onions. add all other ingredients to the pot. let it come to slow boil and reduce heat to simmer for about 15-20 minutes.

2it is ready to eat when pot has simmered to a desired thickness. i usually make cornbread to eat with this.
