Ingredients For vietnamese chicken noodle soup

    whole chicken
  • 12 c
    water
  • 4 sm
    shallots sliced
  • 6 slice
    ginger about the size of a quarter
  • 4
    whole star anise
  • 2
    cinnamon sticks
  • 1/3 c
    fish sauce
  • 6 oz
    rice sticks
  • 2 c
    bean sprouts
  • 1/4 c
    each scallions, cilantro, basil and mint chopped
  • lime wedges for serving

How To Make vietnamese chicken noodle soup

    Cut the chicken into pieces. Add to a large pot. Pour the water over the chicken pieces. Add the shallots, ginger,, star anise, and cinnamon sticks. Bring to a boil. Reduce heat to low and simmer 2 hours skimming the impurites from the broth. Strain the broth into a clean pot. Set the chicken aside to cool a bit.

    Place the broth back on the stove and bring to a simmer. Add the fish sauce and cook on low to keep warm

    Shred the chicken removing the skin and bones. Cook the noodles according to package directions.

    Add noodles to bowls. Top with chicken and bean sprouts. Ladle the hot broth over the noodles. Top with remaining herbs. Add a squeeze of lime when serving
