We love italian wedding soup. We love our soups hearty too, since its National clean out your refridgerater day tomorrow, Im sharing my recipe I made other night. I call it very italian because I tweeked the originally recipes with more italian ingredients. And I dont think theres any weddings coming up in my family soon. Seems like alot of us are unlucky in love. LOL

Ingredients For very italian wedding soup

    chicken stock
  • 1 lb
    meatballs
  • 2
    chopped carrots
  • 1 md
    chopped onion
  • 1 can
    italian tomatos n juice
  • 1
    bag spinach
  • 1
    bag store bought cheese tortallini
  • handful acini
  • garlic

How To Make very italian wedding soup

    You can use store bought meatballs. I mixed pound of ground beef w/egg, italian breadcrumbs,Parm cheese, 1/4 cup finely chopped onion, and 1tbls herbes de provance. made tiny meatballs and baked.

    while meatballs baking saute carrots and onion w/garlic in olive oil. add chicken stock 4 cups water can tomatoes cook on med s&p for 40min. Add meatballs tortelini, and pasta bring back to boil for 10min add spinach season w/S&P and parm cheese simmer for another 10min. enjoy!!!!
