Ingredients For the best chicken tortilla soup

  • 5 lb
    whole chicken, baked, boned and shredded
  • 4 c
    chicken broth
  • 2 c
    salsa (home made is best)
  • 1 1/2 c
    pinto beans, cooked
  • 1 c
    frozen corn
  • TOPPINGS
  • fresh cilantro, chopped
  • onion, chopped
  • avocado, cubed
  • lemon or lime wedges
  • tortilla chips
  • colby jack cheese, shredded

How To Make the best chicken tortilla soup

    In a large pot combine, chicken, chicken broth, salsa, beans and corn. Bring to a boil. Reduce heat and let simmer while preparing toppings.

    Put into individual serving bowls and top with cilantro, onion, avocado, cheese and a squeeze of lime or lemon juice and crushed tortilla chips.
