When I am not feeling well the only food that will do is Chicken Noodle Soup. This soup is full of great flavor and goodness.

Ingredients For the best chicken noodle soup
- STOCK

1whole chicken

1 tsppeppercorns, whole black

1 tspkosher salt

1 lgonion, quartered, leave skin on

3celery stalk with leaves, broken

3carrots, broken, no need to scrape
- SOUP
-
4 ccarrots, sliced
-
1 lgonion, chopped
-
4-5celery stalks, sliced

3 Tbspchicken base
-
1 Tbspparsley flakes
-
12 ozmexican style vermicelli noodles or wide noodles

kosher salt and freshly ground black pepper to taste
How To Make the best chicken noodle soup

1Cook chicken in a large stockpot covered with water and vegetables and seasonings listed under stock.

2Do not let boil. Skim any foam off. Simmer until done. Remove chicken to cool and strain stock. (our dog loves these vegetables added to his dog food)

3When chicken is cool, remove from bone and cut into bite-size pieces.

4Return stock to stockpot, add carrots, celery and onion. Simmer until vegetables are tender. Add chicken base, parsley and vermicelli or wide noodles. Cook until tender but not over cooked about 4 minutes for vermicelli and 8 minutes for wide noodles. Add chicken. Adjust seasonings.
