When I worked full time, I was too tired to spend a lot of time in the kitchen when I got home. I love tortilla soup and experimented until I had an easy recipe I could throw together after work. The rotisserie chicken makes it so easy.

Ingredients For susan's easy tortilla soup

4 15 ozcans low sodium chicken broth
-
1 16 ozjar salsa
-
2 16 ozcans black beans, drained & rinsed

1 16 ozbag frozen corn, thawed

1 10 ozcan ro*tel diced tomatoes and green chilies
-
2 1/2 tspcumin powder
-
1/8 tspchili powder (or to taste)
-
1rotisserie chicken, deboned & cut into bite size pieces
-
1onion, chopped
-
2garlic cloves, minced
-
1small bunch cilantro (or to taste), chopped
-
juice from 1-2 limes
-
corn chips
How To Make susan's easy tortilla soup

1Saute the onion and garlic in a little oil until cooked.

2Add the rest of the ingredients except the cilantro and lime juice and simmer for 15 minutes until heated through.

3Remove from heat and add the cilantro and lime juice.

4Serve in bowls and put crushed corn chips on top.
