Ingredients For spicy chicken soup

1prepared rotisserie chicken or home roasted

1 Tbspolive oil

1 mdonion, thinly sliced

1/2 csliced shiitake mushrooms

2 clovegarlic , finely chopped

11 inch piece ginger, peeled, chopped

2 qtlow-sodium chicken broth
-
1/2 tspcayenne pepper or to taste

2 cbaby spinach or any green that you like

freshly ground pepper to taste

kosher salt to taste (optional)

2 4scallions, thinly sliced

lime wedges (for serving)
How To Make spicy chicken soup

1Pick meat from chicken, shred, and place in a small bowl (you should have about 4 cups). Discard skin and bones.

2Heat oil in a large saucepan over medium-high heat. Add onion and mushrooms and cook, stirring occasionally, until softened and golden, 8–10 minutes. Add garlic and ginger and cook, stirring often, 2 minutes with season with salt and pepper.

3Add shredded chicken, broth, and cayenne and bring to a boil. Add spinach and divide soup among bowls.

4Top with scallions and serve lime wedges alongside for squeezing over.
