This freezes well. Easy I have not made this soup but it sounds so good.

Ingredients For southwestern chicken soup

  • 1 can
    (49-1/2 oz) chicken broth
  • 1 can
    (14-1/2 oz) crushed tomatoes
  • 1 can
    (14-1/2 0z)diced tomatoes
  • 1 lb
    boneless chicken breast..1/2" cubes
  • 1 lg
    onion-diced
  • 3 c
    minced fresh cilantro
  • 1 can
    (4oz) chopped green chilies
  • 1 clove
    garlic minced
  • 1 tsp
    chili powder
  • 1 tsp
    ground cumin
  • 1/2 tsp
    dried oregano
  • 1/4 tsp
    cayenne pepper
  • 3 c
    frozen corn..thawed
  • baked tortilla chips
  • 1 c
    shredded mexico cheese blend

How To Make southwestern chicken soup

  • 1
    In a large saucepan,combine the 1st 12 ingredients. Bring to a boil. Reduce heat;cover & simmer 1 hour. add corn;cook 10 minutes longer. Top each serving with tortilla chips;sprinkle with cheese.
