Ingredients For refreshing summer soup (crock pot)

  • 1 lb
    chicken breast,cut into 1 inch pieces
  • 4 c
    chicken broth
  • 1 c
    onion,choppes
  • 1/2 c
    mushrooms,sliced
  • 1/2
    red bell pepper,sliced
  • 1 Tbsp
    minced fresh ginger
  • 1 Tbsp
    sugar
  • 1 Tbsp
    grated fresh lime zest
  • 2 Tbsp
    chopped fresh cilantro
  • 1 c
    wild rice, cooked
  • 1(15oz) can
    coconut milk (can use unsweetened)
  • pinch
    salt and pepper

How To Make refreshing summer soup (crock pot)

  • 1
    Combine chicken ,broth,onion,pepper,mushrooms,ginger, sugar and spices in a slow cooker.Cook on high 4 hours.

    Stir in rice,coconut milk and lime zest.Cook another 20 minutes or until warm up well.Serve with cilantro on top.
