I love soups!! A local sandwich and soup cafe made this wonderful soup and I had to try and figure out their recipe....this is my version...pretty close! Sometimes I feel like no chicken....I just add more beans. Use your favorite beans...I use black, white, or even black-eyed peas. Very filling!

Ingredients For red, white and green soup

1 Tbspolive oil

1 Tbspgarlic, minced

1onion, diced

32 ozchicken broth, non-fat

1-2chicken breasts, cubed

2-3 canwhite beans, rinsed

9 ozspinach, fresh

1 cantomatoes, diced w/ garlic and basil

1 canrotel tomatoes (optional)

2 Tbsplemon juice
-
16 ozwater
-
salt, pepper, and basil, to taste

1-2 Tbsppesto (optional)
How To Make red, white and green soup

1In large kettle, saute onion, garlic and chicken breasts in olive oil till chicken is done (no pink).

2Add spinach and cook till wilted. Add lemon juice, broth, water, and seasonings.

3Add beans and tomatoes, and simmer till flavors meld.
