quick and healthy chicken tortilla soup
I love chicken soups in all the different ways you can make them,and I wanted to try to make a south western flavored one, but one that would be very quick and healthy. Here it is!

Ingredients For quick and healthy chicken tortilla soup

1 Tbspcanola or olive oil

1 smonion, chopped

1 tspground coriander
-
1 tspground cumin
-
1 tspdried oregano
-
1 tspminced garlic
-
4 can14.5 oz each, chicken broth
-
1 can10 oz, diced tomatoes w/ green chilies

2 ccooked and shredded chicken breast
-
1 can15.5 oz, black beans, drained

1 cfrozen corn kernels
-
1 ccooked white or brown rice
-
1 bagbaked tortilla strips, i buy them in the produce aisle.
How To Make quick and healthy chicken tortilla soup

1Heat oil in lg pot, over medium heat. Add onion, coriander, cumin and oregano. Cook, stirring, until onion is softened.Add garlic and cook additional 1 minute.

2Add all of the broth and the tomatoes. Bring to a boil. Reduce heat to medium-low. Cook 10 mins, stirring occasionally.

3Stir in chicken, beans, corn and rice. Cook 5 mins, or until heated through. Ladle into bowl and top each bowl w/ some tortilla strips, or serve the tortilla strips on the side.
