quick and healthy chicken tortilla soup

I love chicken soups in all the different ways you can make them,and I wanted to try to make a south western flavored one, but one that would be very quick and healthy. Here it is!

Ingredients For quick and healthy chicken tortilla soup

  • 1 Tbsp
    canola or olive oil
  • 1 sm
    onion, chopped
  • 1 tsp
    ground coriander
  • 1 tsp
    ground cumin
  • 1 tsp
    dried oregano
  • 1 tsp
    minced garlic
  • 4 can
    14.5 oz each, chicken broth
  • 1 can
    10 oz, diced tomatoes w/ green chilies
  • 2 c
    cooked and shredded chicken breast
  • 1 can
    15.5 oz, black beans, drained
  • 1 c
    frozen corn kernels
  • 1 c
    cooked white or brown rice
  • 1 bag
    baked tortilla strips, i buy them in the produce aisle.

How To Make quick and healthy chicken tortilla soup

    Heat oil in lg pot, over medium heat. Add onion, coriander, cumin and oregano. Cook, stirring, until onion is softened.Add garlic and cook additional 1 minute.

    Add all of the broth and the tomatoes. Bring to a boil. Reduce heat to medium-low. Cook 10 mins, stirring occasionally.

    Stir in chicken, beans, corn and rice. Cook 5 mins, or until heated through. Ladle into bowl and top each bowl w/ some tortilla strips, or serve the tortilla strips on the side.
