quick and easy chicken soup
After we have a roasted chicken, I often wonder what to make with the leftover meat. There are so many options; today I made chicken soup for my hubby.
This recipe is so easy, you can make your own broth like I did or use boxed chicken broth (2 boxes - 900 ml).
Add any fresh vegetables or pasta that you like, they all add to this comfort dish.
Now, I'll leave the soup to cool, then place it in the fridge.
It will reheat beautifully for our dinner tonight. We find that soup always seems to taste better after it has been reheated, allowing all the lovely ingredients to mingle.

Ingredients For quick and easy chicken soup
- CHICKEN BROTH

1leftover chicken carcus, skin and all, cut up

6 cwater

1/2carrot, cut thick

1 lgcelery stalk, cut thick

1/2 lgonion, coarsley chopped
- SOUP INGREDIENTS

1/2 lgsweet white onion, minced

1 lgcelery stalk, minced

1 lgcarrot, minced

1/4 cdried cranberries, sliced into thirds

1 - 1/2 cdried pasta (no yolk, large), broken up

1 1/2 - 2 cchicken pieces, roughly cut up

1/2 Tbspground poultry seasoning

1 - 2 tspsea salt
-
1/2 - 1 tspfreshly ground black pepper
How To Make quick and easy chicken soup

1For homemade broth: In a large pot add the leftover chicken carcass, the water, carrots, celery, and onion. Allow everything to come to a rapid boil then simmer for about a 1/2 hour. Strain the liquid into a bowl and set aside until needed. You can skip this step and use boxed broth if preferred. It will be good but won't have as much flavour.

2Now that the broth is done we are ready to start. Place the broth in a large pot over high heat and boil for about 5 - 10 minutes.

3To the broth, you will add the onion, celery, carrot, dried cranberries, pasta, and reserved chicken pieces.

4Now add the poultry seasoning, salt, and pepper. Lower heat and allow to simmer until pasta is cooked about (20 minutes).
