This is a little bit different then my mothers chicken soup, this is how my mother in law made her chicken soup.

Ingredients For pollys chicken soup

1 or 2 lbchicken gizzards, (optional)

chicken pieces

4carrots, chopped

5celery stalks, chopped

4 clovegarlic , minced

1onion diced
-
1/2 smhead cabbage, shredded

2 or 3zucchini, sliced or diced
-
1green pepper, chopped
-
1can diced tomatoes
-
1can tomatoe sauce
-
handful cilantro , chopped
-
1 tspadobo powder
-
2 pkgsazon
-
2bay leaves, dried
-
salt & pepper to taste
How To Make pollys chicken soup

1If using gizzards, clean and cook till tender in pressure cooker.

2Add gizzards and water to soup pot, add the chicken and enough water to cover, add garlic and onions, simmer about 30 minutes.

3remove chicken with a slotted spoon. add everything else to pot and simmer while you remove skin and bones from chicken.

4add chicken back to pot and simmer till heated through and vegtables are done. Serve over rice.

5for a thicker broth you can add some diced potatoes to this and a handful of spaghetti noodles broken into 1" pieces, it helps to thicken the broth a bit , my mother in law would remove the potatoes and smash them and add back to the soup as a thickener or she would sprinkle a little instant mashed potatoe flakes into it and serve it with tortillas on the side.
