Ingredients For papa al pomadoro stale bread soup

  • 3 Tbsp
    extra virgin olive oil
  • 4 -6 clove
    garlic
  • 1 lg
    onion
  • 1 15 oz
    can of diced tomatoes
  • 1 28 oz
    can of crushed tomatoes
  • salt and pepper to taste
  • 1 qt
    chicken stock (i prefer to use chicken broth)
  • 4 c
    chopped stale bread
  • 3 15 oz
    cans of small white beans
  • 1/2 c
    grated parmesan cheese
  • 10
    fresh basil leaves

    IN A LARGE DUTCH OVEN OR (STOCK POT)..COOK THE DICED ONION AND THE MINCED GARLIC IN OLIVE OIL 7-8 MINUTES

    DO NOT ADD THE CHOPPED STALE BREAD YET...BUT ADD THE REST OF THE INGREDIENTS AND BRING TO BOILING AND IMMEDIATELY TURN DOWN TO SIMMER FOR ABOUT 5 - 10 MINUTES..... JUST BEFORE SERVING, ADD THE CHOPPED STALE BREAD AND STIR INTO THE SOUP...
