For those of us who love Olive Garden's Chicken Gnocchi Soup but like the convenience of a crock pot. To make it super easy, use chicken from a rotisserie chicken, even though not all of the meat will be white meat. Original recipe calls for 1/2 and 1/2. To tone down the calories, use milk for 1 cup of the added dairy. OR to make it creamier and richer, sub. 1 cup of heavy cream for 1 cup of the 1/2 and 1/2!

Ingredients For olive garden copycat chicken gnocchi - crock pot

  • 3-4
    boneless, skinless chicken breasts, cooked & diced
  • 1 Tbsp
    olive oil
  • 1/2
    onion, diced
  • 1 stalk
    celery, chopped
  • 1/2 c
    shredded carrot
  • 2 clove
    garlic, minced or grated
  • 4 c
    chicken broth
  • salt & pepper, to taste
  • 1 tsp
    thyme, dried (or 1 sprig fresh)
  • 16 oz
    potato gnocchi
  • 2 c
    1/2 and 1/2 (or part milk or part heavy cream!)
  • 1 c
    spinach, chopped roughly

How To Make olive garden copycat chicken gnocchi - crock pot

    Heat olive oil in a skillet over medium heat. Add celery, onions, and carrots and saute for 2-3 minutes until onions are softened. Add garlic and saute for an additional minute.

    Add the sauteed veggies and chicken into a crock pot. Pour chicken broth, salt, pepper, and thyme over veggies and chicken. Cook for 3-4 hours on low.

    Add gnocchi for last hour of cooking.

    Before serving, stir in half and half and spinach and cook another 1-2 minutes until 1/2 and 1/2 is warm and spinach has wilted. Taste, add salt and pepper if needed, and serve.
