my chicken tortilla soup

When my grandkids are sick,this is the soup I have to make for them. I keep ingredents on hand because I can't make for one grandaughter and not the other when they are sick. And they don't fall for "I don't have the ingredents" They know I can change the ingredents and it's still good. I had eaten a tortilla soup at a restarant,and decided to make my own. I think tis is better then thiers, and a lot better then canned. Or the frozen. Enjoy!!!

Ingredients For my chicken tortilla soup

3 ccooked chicken (can also use turkey or ground beef.

1 lgonion chopped

2 clovegarlic minced
-
1 cantomato puree (29.0 oz.)

28 ozchicken broth ( i make my own with instant chicken base)

1 canblack beans
-
1 canwhole kernel corn
-
1 candiced tomatoes with green chilli (10.5 oz )

3 Tbsplime juice
-
1 tspsalt
-
1/4 tspblack pepper
-
2 tspground cumin
-
1/8 tspground cayenne pepper

1 tspchilli powder
-
1 Tbspolive oil
-
1 pkgshredded cheese ( mexican blend or cheddar)

1 pkgtortilla chips
How To Make my chicken tortilla soup

1In skillet,cook onion and garlic in olive oil.

2In soup pot. combine cooked onion,garlic and all of the ingredients but the cheese and tortilla chips.

3When starts to boil, turn heat down and simmer for 10 min. Add about 1 cup of cheese to soup.

4Serve with tortilla chips and cheese on the side.

5The kids add a Tablespoon or 2 of cheese,and crush the chips up for crackers. After awhile they use the soup as a dip for thier chips.

6I have made this using frozen corn,or if I don't have Black beans,I add 2 cans of corn. You can work with it to use what you have.
