I wanted something different from a regular chicken soup and I came up with this recipe after having something similar at a local restaurant. This is one of our family's favorites.

Ingredients For mexican chicken soup

3chicken breasts

1 mdonion
-
2 canchicken broth
-
2 Tbspbutter, unsalted

1 Tbspcumin

1 tspcilantro, dried

1 tsporegano, dried

1 candiced tomatoes with garlic

2 clovegarlic

2 Tbsptomato paste, italian

1 canchopped green chiles

1/2 tspchile powder
How To Make mexican chicken soup

1Boil chicken breasts in water til done. Cool and remove meat. Strain broth and reserve.

2Chop onion and mince garlic. Saute onion and garlic in butter, over low heat, til soft. Add cumin; stir. Add reserved and canned chicken broth. Add tomatoes, paste, chilies, oregano,chile powder and cilantro. Stir well to melt the paste. Cut chicken into bite size pieces and add to soup. Cook over low heat for 1 hour.
