I created this recipe on Dec. 24. After the Christmas feasting and celebrating it was time for a light, tasty, soothing, and nutritious meal. The chicken is chopped to approximately 1/2 inch dice to cook quickly. This recipe is suitable for a very small family, but could be easily doubled.

1Sweat the onions and celery in a saucepan for a couple of minutes.

2Add the rest of the ingredients and bring to a boil.

3Simmer for 30 minutes or until vegetables are tender and chicken is cooked through. Correct the seasonings.
