light and flavourful chicken mushroom soup

I created this recipe on Dec. 24. After the Christmas feasting and celebrating it was time for a light, tasty, soothing, and nutritious meal. The chicken is chopped to approximately 1/2 inch dice to cook quickly. This recipe is suitable for a very small family, but could be easily doubled.

Ingredients For light and flavourful chicken mushroom soup

  • 1 c
    diced onion
  • 1 lg
    carrot, diced
  • 1 stalk
    celery, diced
  • 1 c
    mushroom, diced
  • 2
    boneless chicken thighs, diced
  • 4 c
    mushroom broth
  • 1 tsp
    thyme, dried
  • 1 Tbsp
    salt
  • 1/2 tsp
    pepper

How To Make light and flavourful chicken mushroom soup

    Sweat the onions and celery in a saucepan for a couple of minutes.
  • 2
    Add the rest of the ingredients and bring to a boil.

    Simmer for 30 minutes or until vegetables are tender and chicken is cooked through. Correct the seasonings.

    Serve with cheese biscuits or buttered toast.
