I have Meniere's, so I need to maintain a Low-sodium lifestyle to retain my hearing. Beware of reduced sodium labeling as it's not truly low-sodium! If you want more salt flavor, you can always add it.

Ingredients For lemony chicken, orzo, and spinach soup

    thawed skinless, boneless chicken breasts, diced
  • 2 qt
    low-sodium chicken broth (pacific foods brand is great)
  • 1 c
    orzo pasta, uncooked
  • 4 lg
    eggs lightly beaten
  • 2 Tbsp
    lemon juice (more or less to taste)
  • 1-2 lb
    fresh baby spinach
  • seasonings to taste - i used paprika, onion and garlic powder, and trader joe's 21 seasoning salute

How To Make lemony chicken, orzo, and spinach soup

    In a stock pot, bring broth to boil on high. Add lemon juice and seasonings. Add diced chicken breasts. Add orzo and cook until tender - approx. 7-10 mins. Reduce temp. to medium-high (6.5-7)

    While stirring constantly, slowly pour in beaten eggs until they cook into threads. Add spinach. Stir occasionally until spinach is fully wilted. Taste for seasoning, and adjust as needed.

    Serve hot with crusty garlic bread.
