We buy rotisserie chicken at the market a few times per month, and I love to make soup with the left over chicken. The broth for the soup is really flavorful, and it is packed with good stuff. I like to make it on a chilly day, or when the little one isn't feeling well. She loves her mama's chicken noodle soup :)

Ingredients For leftover chicken noodle soup

4 cchicken stock

2 cwater
-
2 tspchicken base

1 3/4 crotini pasta

1 cchopped celery
-
1 1/2 cchopped carrots

1 smonion, chopped

1 Tbspolive oil

3 ccooked chicken

1 Tbspparsley flakes

1 tspblack pepper
How To Make leftover chicken noodle soup

1Add oil to a large pot and heat over medium setting. Add onion, carrots, and celery - and cook until onion is soft.

2Next, add your stock and water. Bring to a boil. Add in the chicken base, and cook until carrots are tender.

3Reduce heat to a medium boil, and add in your pasta and chicken. Cook for about 10 minutes or until pasta is done. Stir in your parsley flakes and black pepper. Serve and enjoy.
