Ingredients For lazy day chicken tortilla soup - slow cooker

  • 1 lb
    chicken breasts, cooked & shredded
  • 1 can
    15-oz can whole peeled tomatoes - mashed
  • 1 can
    10-oz can enchilada sauce
  • 1 md
    onion, finely chopped
  • 1 can
    4-oz can mild green chiles, chopped
  • 2 clove
    garlic, minced
  • 2 c
    water
  • 1 can
    14.5 oz. can chicken broth
  • 1 tsp
    ground cumin
  • 1 tsp
    chili powder
  • 1 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 pkg
    16-oz. pkg frozen corn
  • 1 Tbsp
    fresh cilantro, chopped
  • 1 can
    your choice - black beans, pinto beans-rinsed and drained
  • 4
    corn tortillas, cut into thin strips

How To Make lazy day chicken tortilla soup - slow cooker

  • 1
    Saute onions in a little oil until translucent and tender. Add garlic, cumin, chili powder, salt & pepper and cook 30 seconds to 1 minute to let the flavor of the spices bloom.

    Add onion mixture to slow cooker. Crush tomatoes and add to slow cooker along with the enchilada sauce, chiles, broth and water. Mix well to combine.

    Add remaining ingredients and cook on low 6 hours or high for 3-4 hours.

    During last 30 minutes to 1 hour, add tortilla strips to allow them to soften and combine with sauce.

    Garnish soup bowls with sour cream, cheese or extra cilantro.
