How To Make just what the doctor ordered chicken soup
-
1In a large frying pan, sautee celery and onions in small amt of olive oil. Then brown chicken legs for just a minute or two in the same pan.Transfer indg. to a large stock pot. Add the boullion cubes and fill the pot with water, approx. 3/4 full. Add the sliced carrots and your favorite spices...example thyme, S&P. Bring to a boil, then simmer for about 2hrs. or until chicken is fully cooked and veggies are soft but not mushy. Strain chicken out of soup, breaking up into bite size pieces.Make sure all of the bones from the chicken are taken out too. Now you are left with the broth, chicken and veggies. Cook pastina according to directions. Strain. Keep on side and add as you ladle out soup into bowl. Sprinkle with parmesean cheese and serve piping hot. Yum! (You can also make this in your crockpot, set it and forget it for approx.5hrs)
