Ingredients For aunt liz's italian wedding soup

1/2 lbground beef or ground turkey

1egg

2 Tbspdry bread crumbs

2 Tbspgrated cheese

1/2 tspbasil

1/2 tsponion powder

5 3/4 cchicken broth

2 cfresh spinach or escarole

1/2 cuncooked orzo

1/3 cgrated carrot
How To Make aunt liz's italian wedding soup

1Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.

2Heat broth to boiling. Carefully drop meatballs into boiling broth.

3Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
