garnish essentials: awesome soup/stew topper

It is fun what you can do with herbs and spices. In this case, I fried them in a bit of olive oil, and used them to top a bowl of soup… Awesome stuff. I am planning to experiment with other herb/spice combinations, but this combination really gave my chicken soup an awesome flavor boost. So, you ready… Let’s get into the kitchen.

Ingredients For garnish essentials: awesome soup/stew topper

  • PLAN/PURCHASE
  • 3 Tbsp
    olive oil, extra virgin
  • 3 - 4
    fresh dill fronds
  • 1 Tbsp
    fennel seeds
  • 1 - 2 Tbsp
    sour cream, or plain yogurt
  • 1 - 2 pinch
    red-pepper flakes

    Gather your ingredients (mise en place).
  • 3
    The amounts pictured will garnish two bowls of soup.

    Heat up the oil in a skillet over medium heat, then add the fennel seeds, and stir for about 50 – 60 seconds. At this point, add the dill fronds, and red-pepper flakes.

    When the dill begins to crisp and turn dark (about 60 seconds), remove the contents of the skillet with a slotted spoon and drain on a paper towel. Then plop a dollop of sour cream or yogurt in the middle of a hot cozy bowl of soup or stew, garnish with the topper, and tuck in.
