Tummy warming, family loving, nutritious, easy chicken soup. Double the recipe for a big family if you like. Use chicken breast if you prefer. I think the thigh has more flavour. If you are pressed for time you can skip the browning and just cook the chicken, vegetables, seasoning and stock together. Cook until vegetables and chicken are done. This soup is even better the next day.

Ingredients For elaine's best chicken soup

  • 1 Tbsp
    olive oil
  • 3
    boneless, skinless chicken thighs or breasts
  • 1 c
    chopped onion
  • 1 c
    chopped carrots
  • 1 c
    chopped celery
  • 1
    bay leaf
  • 1 tsp
    parsley flakes
  • 1/2 tsp
    garlic powder or one clove garlic chopped very fine
  • salt and pepper to taste
  • 6 c
    chicken stock
  • 1 c
    orzo or other small pasta
  • chopped parsely or chives (optional)

How To Make elaine's best chicken soup

    Cut chicken into bite size cubes and brown them in a pot with the olive oil. Remove from pot when browned (they will not be fully cooked at this point).

    Add a bit more oil to the pot if needed and add the onions, celery and carrot to soften for a few minutes.

    Add the chicken, chicken stock, bay leaf, parsley and garlic to the pot and simmer for 15 minutes.

    Add the orzo or noodles and cook for another 10 to 15 minutes until the pasta and chicken are cooked. Add more water if soup is too thick.
  • Chicken soup garnished with green onion.

    Remove the bay leaf and serve. Top with chopped parsley or chives for colour if you like.
