easy peasy chicken noodle soup
We've made this quite a few times and it's always really good. First of all .. the name says it all. Secondly you are making it from the leftovers of a fantastic meal. Thirdly .. why not ! Super simple, hearty, tasty and it will make your heart and soul feel warm and loved :)

Ingredients For easy peasy chicken noodle soup

leftover chicken or store bought rotisserie chicken

leftover vegies of your choice

chicken stock or broth or whatever you have on hand

egg noodles - we prefer the super thin

salt and pepper to taste
How To Make easy peasy chicken noodle soup

1You begin with leftover chicken that you prepared any way you like it. If you don't have that you can certainly use store bought rotisserie chicken. We are trying to make something simple here so that's the reason for the leftovers !

2The amount of stock you need is dependent upon the amount of leftovers you have. Start with a couple of cups and you can add more as you go.

3Heat the stock in a medium to large saucepan. Meanwhile chop the chicken and vegetables into bite size pieces. Drop them into the heated stock and simmer for about 10 minutes.

4Add a handful of egg noodles and cook until they have reached desired tenderness for you. Be sure to add more stock if needed.

5Ladle into a bowl, season with salt and pepper to taste. There ya go .. Easy Peasy Chicken Noodle Soup !
