crockpot creamy tortellini, spinach & chicken soup
I've made this several times now, changing it a bit to suit our mood, and we've loved it every time we've had it. I usually don't heat my cream in the microwave anymore (see step #3). Instead, I measure the amount of cream I'll need and leave it out to reach room temperature, and I've never had a problem with the cream curdling. But if you're pressed for time and use cream straight from the fridge, you should heat it in a microwave for a few seconds so it doesn't curdle or separate when you add it to your crock pot. It'll still be OK if the cream does separate, but it will look a bit odd

Slow Cooker Crock Pot
Ingredients For crockpot creamy tortellini, spinach & chicken soup

1 mdyellow onion, diced

1/3 cupall-purpose flour

2 tspdried basil
-
2 clovegarlic, minced

2 Tbsptomato paste
-
3 Tbspolive oil
-
4 cupslow-sodium chicken broth
-
2 (14.5oz) canpetite diced tomatoes, undrained
-
1 1/2 lbboneless skinless chicken thighs (chicken breasts or chicken tenders can be used)
-
1 tspsalt
-
1/2 tspblack pepper
-
1 (19-oz) bagfrozen cheese tortellini (4 cups)

1 (6-oz) bagbaby spinach (3 cups)

1/2 cupgrated parmesan cheese
-
1 cupcream (i have used light cream, heavy cream, and half & half, all with good results)

1In a medium size skillet, sauté onions with the flour, basil, garlic, tomato paste and olive oil until it makes a paste, about 5 minutes. Add the paste to a 6-quart crock pot.

2Stir chicken broth, undrained tomatoes, chicken, salt and pepper into the paste. Cover crock pot and cook on Low heat for 4 to 6 hours (or cook on High for 3 to 4 hours).

3Remove crock pot lid, stir in tortellini, spinach, and Parmesan cheese. Heat cream in microwave oven for 30 to 40 seconds, and stir warmed cream into crock pot (the cream should be warmed or it's likely to curdle if added while it's still cold).

4Remove chicken from crock pot, and shred chicken or cut into bite-size pieces. Return chicken to the crock pot, stir. Cover crock pot and cook on High heat for 10 minutes more or until tortellini is cooked through.

5Ladle into individual bowls, and serve immediately.
